By using the yeasts that are naturally present on each cluster of berries as opposed to synthetic strains, we have captured the identity of Petit Verdot from this region and its inherent complexities that create an identifiable wine of distinction. Each of these yeasts impart a layer to both the mouthfeel and flavor profile of our wine. Each berry that eventually becomes Decades 5 is hand picked and hand selected for optimal ripeness and balance, ensuring the highest of quality in each bottle.Decades 5 is 100% barrel fermented in new French Oak from several of the world’s most prestigious cooperages: Ermitage, Marques, Vicard, Radoux and Sylvain. By fermenting in the barrel, the tannin structure is softened as it integrates with the wine, softening the mouthfeel and increasing the complexity. Our Petit Verdot is neither filtered nor fined to further respect the philosophy that by selecting the finest vineyard sources and handcrafting our wine, the truest representation of the varietal and vineyard will be expressed.
