Located in southwestern Ontario, Oriole Winery has been a "fermentation- on- premise" facility for over 10 years. Proprietor, David Cats has been making wine for over 16 years. A fermentation- on- premise is a hands on approach to making wine without the mess and equipment that goes with it when making wine at home. Our facility offers a climate controlled fermentation room, automated bottling equipment and most importantly, a large selection of juices to meet most tastes.Getting started is quite easy. Government regulations require you to "start" the fermentation process, thus we hand you a package of yeast that you sprinkle over the juice. After that step we take care of the rest until bottling time. Bottling occurs 4-6 weeks later, depending on what juice you chose. Our kits come in 7.5, 10 and 23 litre. Water is added to the 7.5 and 10 litre juices to top up at 23 litres. The 23 litre juice has no water added. No matter what your selection is we guarantee a superb product with many of our wines being award winners.Whether you are looking for a wine to drink in 4 weeks or would prefer to age a batch or maybe drink some early and age the rest that{s not a problem. Many of our wines are great young and age beautifully. We actually recommend you put 6 bottles away and forget about them for a year. Maybe you have a favourite wine you buy. Many of our wines are the same juice used in wines available at the LCBO. Our products have far less sulphites and additives found in store bought wines also. And, the best reason to make wine on-premise is the cost. A batch of 30 bottles is a fraction of the cost you would spend at a wine store.
